Let's Make This: Blue Cheese Beer Dip

Baked pretzels with cheese dip

 

Ingredients:

1 Tbsp butter
2 cloves of garlic, minced
1/2 cup onion, finely diced
8 oz softened cream cheese
1 cup shredded cheddar cheese
1/8 tsp cayenne pepper
6 oz beer

 

Directions:

Melt butter over medium-high heat in a skillet. Add garlic and onion, cook for 3-4 minutes or until fragrant & translucent. Lower the heat and add the cream cheese and Blue Cheese, Honey & Shallot Spread. Stir constantly until fully mixed. Add the cheddar and stir to combine. Add in the cayenne pepper and slowly add in the beer. Heat until dip bubbles and simmer until it is well blended. 
Serve warm and enjoy!

 

Notes: For a smooth sauce, shred the cheese yourself, pre-shredded cheeses can have additives that keep them from melting smoothly. Do not overheat the cheese or it can become grainy in texture. Keep warm on a cheese fondue warmer or in a mini crock pot. A darker beer will have a more bitter beer flavor while a lighter beer will produce a lighter beer flavor. Either will work in this recipe.
