Auntie B’s Blistered Peach Cobbler

Serves 4

3 fresh peaches
1 jar of Bellisari's Blistered Jalapeno & Fig Spread
1 cup of flour
½ cup sugar
1 tsp baking powder
1 tsp salt
¼ tsp vanilla
1 stick of melted butter
½ cup of milk
Topping Ingredients
1 cup of sugar
½ cup of hot water

Preheat oven to 350 degrees. Lightly grease and flour the glass pan. Slice the peaches and lay them in a single layer at the bottom of the pan and pour 1 cup of Bellisari’s Blistered Jalapeno & Fig Spread on top of the peaches. In a separate bowl add the flour, ½ cup of sugar, baking powder, salt, vanilla, butter and milk and mix thoroughly. Using a large tablespoon, place a dollop of batter generously over all the peaches and set aside. In a separate bowl, add the remaining cup of sugar with the hot water and mix thoroughly to dissolve. Pour mixture over batter and peaches and bake in oven for one hour.
