Beetlejuice Cupcakes

Need a last minute party idea? Try these Beetlejuice inspired cupcakes with Fig. Colored green with a secret, natural ingredient... spirulina!

1/2 jar Blistered Jalapeno & Fig Spread
1 box Simple Mills vanilla cake mix
1/3 cup coconut oil
1 tbsp vanilla
3 eggs
1/3 cup water
3 tbsp green spirulina (we used one from Thrive Market)
1 jar Simple Mills vanilla frosting
Preheat oven to 325ºF and grease a cupcake pan. Prepare cake mix according to box - mix oil, water, eggs and vanilla in a bowl and add cake mix. Add in 1/2 jar of Bellisari's Blistered Jalapeno & Fig Spread and mix well. Split the cake mix in half and add spirulina to one bowl and mix. Alternate a scoop of each cake mix into the cupcake pan. Mix slightly with a chopstick to get a marbled effect and bake for 30-35 mins. While that is in the oven, split half of the frosting into a bowl and add 1 tbsp of Blistered Jalapeno & Fig as well as 1 or 2 tbsp of spirulina (depending on how dark you want the green to be). Add to piping bag on one side and add the plain white frosting to the other side. Remove cupcakes when they're done and allow to cool slightly before adding frosting. Enjoy!
