Bellisari's Calabrian Breakfast Phyllo Cups
1 package Bellisari’s Phyllo Cups
6 eggs, whisked
1/2 cup shredded mozzarella
6 slices of prosciutto, diced
Bellisari’s Calabrian & Sweet Tomato Fennel Spread for topping
salt and pepper for seasoning
In a medium size bowl whisk the eggs and add salt, pepper and other preferred seasonings.Set your pan to medium-low heat and add prosciutto, cook until the pieces are crispy. Once the prosciutto is crispy add butter to the pan and once it is melted add the whisked eggs to low heat and stir them until they begin to come together. Before they are finished add the shredded mozzarella to the egg mixture and finish cooking.
Place a spoonful of eggs in each phyllo cup and top with Bellisari’s Calabrian & Sweet Tomato Fennel Spread.
