Barista Roasted Chicken Legs

Serves 4

2 Tbsp. olive oil
½ tsp. kosher salt
¼ tsp. pepper
8 small chicken thighs and drumsticks (2 ½ pounds)
1 jar Bellisari’s Barista Sauce
1 diced small red onion
1 can pineapple chunks
1 can baby corn

Toss chicken, red onion, pineapple chunks and baby corn in olive oil, salt and pepper mixture and then arrange on deep roasting pan with vegetables on bottom and chicken on top. Halfway through cooking, brush the Bellisari’s Barista Sauce generously on the chicken legs. Broil 20 minutes in preheated oven following this pattern: 5 minutes on top rack, 5 minutes on medium rack, turn & baste, 5 minutes on top rack, 5 minutes on medium rack or bake at 400°F for 40 minutes.
