Blue Cheese Honey and Shallot Bread Pudding with Blueberries
4 Tbsp soften butter
20 oz cubed French bread
1 jar of Bellisari's Blue Cheese, Honey and Shallot Spread
5 Eggs lightly beaten
5 Egg yolks
3 Cups heavy cream
1 Tbsp salt
1 Tbsp ground black pepper
4 oz of Fresh Blueberries
Melt the butter in a skillet over low heat, add Bellisari's Blue Cheese Honey & Shallot Spread to soften. Remove from heat and add blueberries.
Arrange 1/2 the bread in the bottom of a 9x13 inch dish, pour 1/2 the blue cheese mixture over bread and then top with the rest of the bread and mixture.
In a small bowl, whisk together the eggs, egg yolks, heavy cream salt and pepper. Pour over bread mixture and set aside for 30 mins. Preheat oven to 375 degrees Bake pudding 40 mins in the preheated oven. Cover pan and continue baking 15 minutes, or until set and golden brown. Allow to sit 15 minutes before serving.
