Let's Make This: Grilled Pineapple Chicken Burgers with Bellisari's Pineapple Adobo

Servings: 6-8
Ingredients:
- 1⁄4teaspoon paprika
- 1⁄4teaspoon curry powder
- 3 tbs Bellisari's Pineapple Adobo
- 1 pinch nutmeg
- 2 lbs ground chicken
- 2 tablespoons fresh minced garlic (or to taste)
- 2 green onions, finely chopped (or use 1 small yellow onion)
- black pepper
- 2 teaspoons seasoning salt (or to taste, or use white salt
- 8 slices of fresh pineapple rings (or use canned pineapple slices, fresh is better!)
- Honey hamburger buns
- lettuce leaves
Directions:
- In a large bowl whisk/mix the paprika, curry powder, and nutmeg. Once mixed together, add in ground chicken, garlic, green onions, black pepper and salt, Bellisari's Pineapple Adobo, and mix until combined
- Shape the ground chicken into 6-8 patties, refrigerate for 2-4 hours
- Grill patties for 5-6 minutes per side
- Add pineapple slices to grill and cook for 4 minutes while basting with Bellisari's Pineapple Adobo
- Add your burger to a bun, and top it with a grilled pineapple slice and a piece of lettuce

Berries are round, soft-fleshed, pit-free fruits that burst with sweet and tart flavors.
They’re rich in vitamins, minerals, and antioxidants, making them an ideal addition to your diet. But did you know that berries go beyond just your usual strawberries and blueberries? These typical market finds are awesome, but there’s a myriad of berries out there waiting for you to try.
There are over 20 different berry varieties to check out, if you’re really ready to broaden your berry horizons. For our purposes here, let’s talk about berries that are readily available nearly all year round. Of course they’re better when they’re in season and generally are sold at a better price in season too.
Let’s kick things off with a popular berry that’s actually not a berry! Let me explain.
In botanical terms, a berry is defined as a “simple fruit with seeds and pulp produced from a single ovary of a single flower.” From this definition, fruits and veggies such as grapes, tomatoes, cucumbers, and watermelons fall under the berry category.
- The Strawberry: The strawberry doesn’t. Strawberries are produced by a single flower with more than one ovary, so it’s not a simple, but an aggregate fruit. True berry or not, strawberries are still considered one of the most beloved berries on earth. This sweet, tart, and fragrant summer produce isn’t just delicious but also packed with nutrition. A daily dose of strawberries helps lower blood pressure and inflammation.
- Blueberries: Sweet, juicy, and fruity, blueberries are often called nature’s candy. They’re fantastic for snacking, but also a great ingredient for making baked goods and desserts. Besides their awesome taste, blueberries are rich in fiber and antioxidants. They’re also low in fat and packed with vitamins C and K.Some studies even suggest that the anthocyanins in the berry can help promote good eye health.
- Raspberries: Similar to strawberries, raspberries are another faux berry with a wonderfully tart flavor and tons of nutritional value. There are four varieties of raspberries, namely red, black, golden, and white.
- Red raspberries are high in fiber and vitamin C. They’re also scientifically proven to reduce the risk of developing heart disease, certain cancers, and type 2 diabetes. Black raspberries have a high anthocyanin content that can lower cholesterol and inflammation, as well as prevent certain types of cancer. Lastly, golden and white raspberries are an excellent source of antioxidants.

Bellisari's and North Country Charcuterie

Breakfast Casserole with Bellisari’s Blistered Jalapeño & Fig Spread and North Country Charcuterie Breakfast Patty
Ingredients:
Softened butter to grease the pan
6 tsp olive oil
3 tbsp Bellisari’s Blistered Jalapeño & Fig
¾ lb North Country Charcuterie Breakfast Patty
1 large red onion, halved, and then sliced lengthwise into ¼ thick wedges
Kosher salt and black pepper
4 cups torn kale leaves
¾ cup diced fontina
12 large eggs
¾ cup heavy cream
½ cup grated parmesan
Aleppo pepper for finishing
Directions
- Heat oven to 325 degrees. Generously butter a large 2½-quart baking dish.
- Heat 2 teaspoons of olive oil in a large nonstick skillet over medium. Add North Country Charcuterie Breakfast Patty and cook, stirring to break it up, until lightly browned, 6 to 8 minutes. Transfer to the baking dish, spreading it in an even layer.
- Add 2 teaspoons of oil to the skillet and increase heat to medium-high. Add red onion, salt it lightly and cook, stirring frequently, until it starts to take on color, about 8 minutes. Reduce heat to medium-low and continue cooking until softened, 3 to 4 minutes. Transfer to the baking dish and arrange evenly on top of the sausage.
- Add the remaining 2 teaspoons of oil to the skillet and heat over medium. Add kale, season it lightly with salt and pepper, cover and cook, occasionally tossing with tongs until wilted, 2 to 3 minutes. Transfer to the baking dish and arrange evenly on top of the onions. Top with the fontina.
- Whisk together the eggs, Bellisari’s Blistered Jalapeño & Fig, and cream in a large bowl and season generously with salt and pepper. (If making ahead of time, wrap the baking dish and egg mixture separately and refrigerate until needed.)
- Pour the egg mixture over the ingredients in the baking dish, and sprinkle with Parmesan. Bake until the eggs are just set in the middle, 25 to 30 minutes. (Increase the baking time by about 15 minutes if the components were refrigerated ahead of time.).
- Broil until the top is lightly browned, 2 to 3 minutes. Sprinkle with Aleppo.
Pad Thai North Country Charcuterie Sai Ua Sausage with Bellisari’s Saigon Street Sauce
Ingredients:
1 (14 oz) package stir-fry rice noodles
1 lb North Country Charcuterie Thai Style Sai Ua Sausage
2 tbsp vegetable oil
½ lb peeled and deveined small shrimp
6 green onions, chopped into 1-inch pieces
2 cloves garlic, finely chopped
3-4 tbsp Bellisari’s Saigon Street Sauce
3 tbsp soy sauce
3 tbsp fresh lime juice
2 tsp fish sauce
¼ cup chopped fresh cilantro
½ cup chopped roasted salted peanuts
Directions
- Cook noodles according to package directions. Rinse well with cold water to prevent sticking and set aside.
- In a medium bowl add the shrimp and Bellisari’s Saigon Street Sauce, coat the shrimp evenly and let sit for 10 minutes
- Heat a large skillet over medium heat. Add North Country Charcuterie Thai Style Sai Ua Sausage in a single layer. Cook on both sides until browned, about 6 minutes total. Remove to a plate.
- Add the vegetable oil to the skillet, then the shrimp, green onions, and garlic. Cook 3 to 4 minutes, until shrimp is opaque.
- Meanwhile, in a small bowl, whisk together the soy sauce, lime juice, brown sugar, fish sauce, and 2 tablespoons of water.
- Add the noodles and smoked sausage to the skillet, then the soy mixture. Stir well to combine. Increase heat to medium-high and cook 2 to 3 minutes, or until noodles are hot. Mix in 1/2 of the cilantro and peanuts. Ladle pad Thai into serving bowls and top with remaining cilantro and peanuts.
- Optional: once ready to serve, drizzle Bellisari’s Saigon Street Sauce on top

-4-ounces cream cheese, room temperature
-1/4 cup sour cream
-1 pack of dinner rolls, halved
-3 tbs salted butter
-1/3 cup olive oil may, or use plain Greek yogurt
-2 tbs fresh lime juice
-1/4 cup fresh cilantro chopped
-1 ½ cups shredded Monterey or pepper jack cheese
-3 tbs Bellisari’s Blue Cheese, Honey, & Shallot
Directions:
-Preheat oven to 400℉
-Mix the spices in a bowl along with a pinch of salt
-In a large skillet, heat the olive oil over medium to high heat. Add onion and cook until soft, then add the corn, garlic, 1 tsp of the spice mix, and season with salt and pepper- cook until the corn is soft
-Reduce the heat to low and mix in the cream cheese and Bellisari’s Blue Cheese, Honey, & Shallot until melted and then stir in the sour cream and take off heat
-In a separate small-medium skillet, melt butter until golden and then mix in 3 tsp of spice mix and a pinch of salt. Cook for another minute, then remove from heat
-In a separate bowl, mix the mayo and lime juice with a pinch of salt
-Place the bottom half of the dinner rolls onto a lined baking sheet and spoon the mayo onto the rolls. Sprinkle your cilantro and shredded cheese on top, drizzle on the spicy butter, then spoon on your corn mixture.
-Place the top of your rolls back on, and cover with tin foil
-Cook for 6 minutes, remove the tin foil, and cook for an additional 6-8 minutes
