Thanksgiving Leftover Breakfast Burrito
Turn those leftovers into a savory breakfast - add some extra flavor and it won't feel like just another meal with turkey in it!
Olive oil or butter
1 garlic clove, finely minced
1/4 cup leftover turkey, diced or shredded
1/4 cup leftover stuffing
A handful of leftover veggies
1 spoonful of mashed potatoes
1 large tortilla
3 tbsp Bellisari's Blistered Jalapeno & Fig Spread or Barista Sauce
Salt and pepper to taste
Heat oil or butter over medium-high heat in a large sauté pan. Add garlic and sauté for 1 minute. Stir in turkey, stuffing and veggies of choice. Cook until heated through. Add in the egg over the existing ingredients in the pan and stir. While that is cooking, warm the mashed potatoes. You can either warm the tortilla in the microwave or you can remove the ingredients from the pan once it is done cooking and warm the tortilla on the pan for 10 seconds before wrapping. Scoop the mashed potatoes into the centre of the tortilla. Add a few scoops of the turkey mixture in the centre. Top with a few scoops of Blistered Jalapeno & Fig Spread or Barista Sauce. Season with salt and pepper to taste and roll the burrito!
