Saigon Chicken Thigh Bake with Asian Veggies

Serves 4-6

Ingredients
2 Tbsp. olive oil
½ tsp. kosher salt
¼ tsp. pepper
2lbs chicken thighs 
1 jar Saigon Street Sauce
1 diced small red onion
½ pound shitake mushrooms
¼ pound bok choy
1 can baby corn

Directions
Toss chicken, red onion, shitake mushrooms, bok choy and baby corn in olive oil, salt and pepper mixture and then arrange on deep roasting pan with vegetables on bottom and chicken on top. Halfway through cooking, brush the Bellisari’s Saigon Street Sauce generously on the chicken thighs. Broil 20 minutes in preheated oven following this pattern: 5 minutes on top rack, 5 minutes on medium rack, turn & baste, 5 minutes on top rack, 5 minutes on medium rack or bake at 400°F for 40 minutes.
