Grilled Barista Sweet Potato Nachos

Serve a crowd (10-12 people) with these simple nachos. Our Barista sauce instantly replaces 5 ingredients from the original recipe!

1 medium sweet potato, peeled and sliced into 1/2 inch thick slices
2 ears corn, husks and silks removed
1 bag tortilla chips
2 cups shredded cheese of choice
1/2 cup canned black beans, drained and rinsed
3 jalapeños, seeded and chopped 
2 green onions, chopped
Lime wedged
Preheat grill to medium-high heat. Grease grate. Brush corn and sweet potatoes with Barista Sauce. Grill for 10-15 minutes, turning occasionally. Should be well marked and tender. Remove from grill and cut kernels from corn and finely dice sweet potatoes. Preheat broiler to high. Layer tortillas on baking sheet with corn, sweet potatoes, cheese, and black beans. Broil until cheese is melted. Drizzle Barista Sauce on top. Garnish with jalapeños and green onions. Serve with lime wedges, guacamole, and salsa.
