Eggs Benedict with Blue Cheese

Try this delicious breakfast for any day of the year! 

2 eggs
1 pack of Hollandaise sauce
1/4 cup Bellisari's Blue Cheese, Honey & Shallot Spread
1 tbsp white vinegar
2 slices Canadian bacon
1 English muffin


In a small pot, cook Hollandaise sauce according to packet. Add in 1/4 cup Blue Cheese, Honey & Shallot Spread and mix well. Crack one egg into a small dish or measuring cup. This will help keep it intact when adding to the water to poach it. In a separate pot, boil water and vinegar. Use a slotted spoon to create a small whirlpool in the pot. Add in eggs one at a time. Cook for approx 4 minutes if you like a soft egg. While eggs are cooking, toast the English muffin. 

Assemble everything: half English muffin, then a slice of Canadian bacon, the poached egg, and then your Blue Cheese Hollandaise sauce! Enjoy!
