Blue Cheese Shrimp Roll

1 ½ pounds of Shrimp, thawed and cut in half
½ Jar Bellisari’s Blue Cheese, Honey & Shallot Spread
¼ cup celery, thinly diced
¼ cup scallions, minced
2 tablespoon fresh dill, minced
2 tablespoon lemon juice
1 tablespoon white vinegar
Old bay for seasoning and garnish
4 split top buns
Salt and steam shrimp in a post of boiling water for 2-3 minutes. Remove and run under cold water until the shrimp is completely cooled.
In a large bowl whisk together Bellisari’s Blue Cheese, Honey & Shallot Spread, celery, scallions, fresh dill, lemon juice, vinegar and Old Bay seasoning to taste. Once combined fold in the shrimp gently. 
Toast the split top buns on a griddle until the outside is golden brown. Add the shrimp mixture in the middle and enjoy.
