Blue Cheese & Shallot Steak Pinwheels
1 lb. raw flank steak
1/2 cup Bellisari’s Blue Cheese, Honey & Shallot Spread
1 clove garlic
¼ cup minced shallot
¾ lb. mushrooms
1 lb spinach cooked, drained.
¼ tsp each- salt & pepper
Cut steak against the grain into ½ inch slices. Pound to ¼ inch thickness. Sauté shallot & garlic for 5 minutes, add mushrooms and season to taste.
Layer the Bellisari’s Blue Cheese, Honey & Shallot Spread and mushroom mixture over meat. Top with spinach. Roll up jelly-roll style. Secure with toothpicks.
Arrange rolls on an oiled baking sheet. Place under a broiler, cook until browned 3-5 minutes each side.
