Blistered Fig Bay Scallops

1 pound Bay Scallops
1 jar Bellisari’s Blistered Jalapeno & Fig Spread 
½ stick butter
½ lemon, juiced
Salt & Pepper
5 lettuce cups (optional)

Heat a large pan to medium-high heat. Wait for the pan to reach temperature, approximately 3 minutes. Season scallops with salt and pepper. Melt butter in Pan, when the butter is completely melted add Bay Scallops and sear until the bottom is caramelized. Flip scallops, reduce heat to low, add lemon and Bellisari’s Blistered Jalapeno & Fig Spread. Cook until the scallops are finished and sauce becomes a glaze. Remove & serve in lettuce cups. Enjoy!
