Apple Cinnamon Mug Cake with Peach

Ingredients:
Apple Layer
- 1/4 tsp all purpose flour
- 1/2 cup peeled and chopped apple of choice (red apples will become softer when baked)
- 1 tbsp packed brown sugar
- A pinch of ground cinnamon
Cake Batter
- 2 tbsp unsalted butter
- 5 tbsp all purpose flour
- 1/2 tsp baking powder
- 2 tbsp granulated sugar
- A pinch of cinnamon
- A pinch of salt
- 1/4 cup milk
- 1/4 tsp vanilla extract
- 1 tbsp Bellisari's Harvest Ginger Peach Spread
Instructions:
In a small bowl, mix together dry ingredients for the cake batter. In your microwave safe mug melt the butter for 30 seconds in the microwave. Swirl the butter around when melted to act as the non-stick coating in the mug. Add the melted butter and remaining ingredients for the cake batter into the bowl of the dry ingredients. Whisk together until smooth, do not over mix. In the mug you used to melt the butter, add the ingredients for the apple layer. Stir until the flour and sugar are evenly distributed and there are no dry ingredients stuck to the bottom of the mug. Microwave this mixture on high for approx. 45 seconds. You want them to be slightly softened. Stir again before adding the cake batter on top. Microwave everything together on high for 90 seconds. If the batter is still wet one top, microwave at 10 second intervals until the cake is cooked through. Enjoy!
