Ingredients
- 1 Package of Bellisari's Phyllo Shells
- 1/4 jar of Bellisari's Calabrian Pepper & Sweet Tomato Fennel Spread
- 6 eggs, whisked
- 6 ounces thick prosciutto, cubed
- 1/2 ball fresh mozzarella
- Salt & pepper
Directions
- Place your cubed prosciutto in a medium size pan on medium high heat and cook until brown and crispy, about 8 minutes.
- Remove the prosciutto and remove all of the grease except for two table spoons worth.
- Lower the temperature of the pan to low heat and pour in the whisked eggs.
- Cook until they reach your desired consistency for scrambled eggs.
- To assemble fill Bellisari's Phyllo Shell with 1 tablespoon of scrambled egg and top with crispy prosciutto, 1 cube of mozzarella and a dab of Bellisari's Calabrian Pepper & Sweet Tomato Fennel Spread. Enjoy!
