Let's Make This: Dad’s Spicy Chipotle Skillet Corn with Bacon

Bellisari's Barista sauce in front of spicy corn recipe

Serves 6-8


½ lbs bacon cut into small cubes

1 cup red onion diced

3 tbsp butter

4 cups corn fresh, canned or frozen

1/2 cup of Bellisari’s Barista Sauce 

1 dash salt 

1 dash ground pepper

½ tsp chipotle spice

fresh parsley if desired


In a large skillet cook your bacon pieces and onions together. You want to cook over medium heat until the bacon browns and the onions start to caramelize. This should take about 10 to 15 minutes.  Add butter and let it start to melt and sizzle a bit.  Add the corn.  If corn is not already cooked then you will want to cook it for about 8 to 10 minutes, or until edges start to brown.

Add Bellisari’s Barista Sauce, salt, pepper and chipotle spice. Stir until incorporated evenly.  Remove from heat and transfer to a large bowl.

Toss parsley over top just before serving if desired.
