April Fool’s Day Meatloaf Carrot Cake

Serves:  8


1 Pound of Ground Beef 

1 Pound of Ground Chuck 

2 Eggs 

1/3 Cup Italian Bread Crumbs 

1/3  Cup Chopped Garlic  

1/3 Cup Dried Parsley 

1/3 Cup Parmesan Cheese 

2 tsp Salt 

2 tsp Pepper 

1 Jar Bellisari's Barista Sauce

1 package of cream cheese (set aside for icing)

1 Jar of Bellisari’s Blue Cheese Honey & Shallot Spread

1 large carrot shredded for garnish (save the stem)

Panko breadcrumbs for garnish


Preheat oven to 350 degrees.  

Thoroughly mix first 9 ingredients together using your hands and not a mixer.  Once meat is mixed, spray oil in a round cake pan and press meatloaf mixture in the pan.  Generously spread Bellisari's Barista Sauce over the top of the meatloaf.  Cook for 60 minutes or until the center reaches 160 degrees.

In a separate bowl, mix the cream cheese and the Bellisari’s Blue Cheese, Honey & Shallot Spread to use as the icing.  Once the meatloaf has cooled, remove it from the cake pan and spread the icing generously on the meatloaf.  Garnish the cake with the carrot stem, shredded carrots and panko breadcrumbs!  Enjoy!
