Last Minute Quick and Easy Christmas Eve Dinner Ideas

With Christmas looming large in a couple of days, of course I’m busy crossing off holiday tasks from a list that seems to get longer rather than shorter with each passing day! Weeknights are crazy no matter the time of year — add Christmas shopping, memory-making, present-wrapping, and all of the holiday festivities into the mix, and you’ve got yourself one daunting “to-do” list. It’s easy to forget some of the everyday things that still have to happen too. For instance, you may have every detail of your Christmas Day meal planned, right down to the centerpiece on the kid’s table, but have you considered the fact that folks will want to eat on Christmas Eve too? You should add it to the ever-growing list for sure, but here are some easy and tasty recipes that will satisfy the hungry hoards that are passing through. No one goes hungry, and you can focus on the fun stuff, enjoying the holiday magic without as much of the stress.

On Christmas Eve, it seems like everyone has to be at different places at all hours, so it works well if you can have foods that are quick and easy to grab on the go. I love ham for occasions like this one. Family and guests can easily grab a few slices for a quick protein fix; add a nice roll, a slice of cheese, maybe a dab of mustard, and voila! You’ve got yourself a lovely and filling sandwich. However, don’t use the same ole glaze this year. Switch things up by using our Harvest Ginger Peach Spread! It’s delicious and super easy to grab on the go. Just put the salad all together, but leave the dressing on the side. That way diners can put the amount they like on when they want it without having the lettuce get soggy.
