These days, since my boys are older, trick-or-treat isn’t a big deal around our house. However, interestingly enough, they still love one of our traditions that if truth be told, originated out of the need to get something hearty and healthy into their little bellies, quickly, before they dug in to all the candy they’d receive that evening. 9 times out of 10, I’d be rushing home from work, having intended to leave early, but never actually leaving as early as I wanted. The Halloween dinner idea I came up with was a “Make your Own Flatbread” bar, and to this day, I get a big smile out of my guys when they see the trappings set up on the kitchen island.

This meal works so well for so many reasons.

  • Hey busy moms! Everything can be prepared ahead of time – a day or two before the event, cut favorite toppings into Halloween shapes like triangle jack-o’lantern eyes, strips of mozzarella for mummy “wrappings,” shredded cheese for hair, and veggies and pizza-friendly meats cut into creative shapes for the kiddos. Since toppings go on after the dough is cooked, you might want to pre-cook some of the toppings if your kids like their veggies slightly more done. (Think green peppers and onions slightly cooked in the microwave.) If your toppings are going to taste good, barely cooked, and perhaps charred from a broiler, then you can assemble them raw atop your flatbread (think canned tomatoes or fresh, leafy greens, and cheese).
  • Store-bought flatbread base is fine – you can find healthy, whole-wheat flatbread in most grocery stores, but don’t be afraid to use an unconventional base such as a tortilla, english muffins, pita bread, naan, etc. 
  • Homemade flatbread is super easy – If you have plain flour and olive oil in the pantry, you always have flatbread on hand. Just take one mug of plain flour combined with 1-2 teaspoons of olive oil per person, then slowly add cold water until it’s a soft, smooth dough which leaves the bowl clean. Divide the dough into balls, roll out to less than a ¼ of an inch thickness then dry fry in a non-stick pan. They’ll only take a few moments and are ready when both sides have golden brown patches all over.
