Bring Spring Break Home this Year

I just love this time of year when the daylight sticks around longer, and the temperature outside is feeling decidedly spring-like. In past years, when spring arrived, many of us would be thinking of travel. The kids have a week off for Spring Break, and this has always been a popular time of year to visit the beach to soak up the warm sun and feel our toes in the sand or to head for the mountains to get in some last-minute ski and snow fun before it’s full-on summertime! However, for several reasons, travel isn’t an option right now for many of us. Travel restrictions and stay-at-home orders still in place in various countries, lack of funds due to the current economy or from job loss or illness, and fear for whether travel is actually safe or not at this point have meant many spring-break plans have been canceled. 
Even if you hadn’t planned on traveling this month, you probably wish you at least had that option. The good news is that even though you might be stuck at home, you don’t have to be bored by doing the same old thing every day. 
Other than activities and adventures, for me a very important aspect of any vacation is the food! Whether it’s ethnic and authentic to the region you’re visiting or a new and different preparation of foods you are familiar with, one very simple thing you can do to get that spring-break feeling and flavor (pun intended!) at home is to pull out some super tasty and tropical recipes! You can give yourself the “spring-break” feeling you so very much need and deserve by incorporating these 2 great Mexican-inspired tapas into your menu for the week:
