4 Poolside-Perfect Recipes for those Steamy Summer Days

Posted by Annette Bellisari on

One of my favorite things to do in the summer is to hang out poolside with friends and family. Relaxing in the sun, taking a dip when I get too hot...ahhh, that is the life! That beautiful scenario isn’t complete, however, without cold drinks and something cool and delicious to eat. If you can figure out your beverage of choice, I can help you with these four recipes that are perfect for those steamy days out by the pool.

  1. Barista Grilled Chicken Wrap (https://bit.ly/2TbBBgo) -- Wraps are fun, healthy, and delicious. They are portable, hand-held, and easy to eat. This yummy wrap recipe is loaded with many more veggies than you usually find on most burgers or sandwiches. Romaine lettuce, basil leaves, cilantro, black beans, corn, jicama, tomato, and avocado are rounded out with lean chicken to make this wrap a super healthy and filling (but not heavy) option. Ideally, you’re using leftover grilled chicken breast, but rotisserie chicken from the store works great too. Don’t heat up the kitchen or the grill if you can avoid it!

  2. Barista Pulled Chicken (https://bit.ly/3w5rN5Z) -- This delicious chicken sandwich is easy to serve warm by the pool because the recipe calls for using the slow cooker/crock pot. We recommend serving this with our Saigon Slaw on the side -- or if you’re like me, put that slaw on your pulled chicken sandwich like a crunchy, fresh condiment!

  3. Chilled Calabrian Crab Dip (https://bit.ly/3inh1UL) -- Delicious seafood goes with being by the water even if it’s a pool instead of the ocean. This no-cook dip sounds rich and indulgent because it is, but with the crab and our delicious Calabrian Pepper & Sweet Tomato Fennel Spread layered on top of cream cheese, it makes a dreamy poolside snack.

  4. Frank's RedHot Buffalo Hummus with Bellisari’s Blue Cheese Honey & Shallot Spread (https://bit.ly/3zbYReH) -- There’s nothing to cook with this recipe, so you don’t have to worry about heating the kitchen or anywhere else. This dip brings a little of its own heat, but it’s the kind of heat your tastebuds will like -- especially washed down with something ice cold to drink!

Now when you get one of those days to lounge poolside this summer, you’ll know just what to make so that you and your loved ones can enjoy cooling off with easy dishes that keep everyone satisfied and keep you out of the hot kitchen.
