It's a beans & greens kind of day, we love this old school italian recipe, and it comes together in just minutes!
Ingredients2 tablespoons olive oil
1 cloves garlic, minced
1/2 cup onion, chopped
5 cups chopped escarole or other leafy green
2 cans capellini beans
1 jar Bellisari's Calabrian Pepper & Sweet Tomato Fennel Spread
Heat oil in heavy large pot over medium-high heat. Add your minced onion and garlic, cook until translucent. Add your 5 cups of chopped escarole and cook until wilted. Add capellini beans and Bellisari's Calabrian Pepper & Sweet Tomato Fennel Spread and cook for about 10-15 minutes until combined. Add salt & pepper to taste!
