Breakfast Phyllo Bites

1 Package of Bellisari's Phyllo Shells
1/4 jar of Bellisari's Calabrian Pepper & Sweet Tomato Fennel Spread
6 eggs, whisked
6 ounces thick prosciutto, cubed 
1/2 ball fresh mozzarella
Salt & pepper

Place your cubed prosciutto in a medium size pan on medium high heat and cook until brown and crispy, about 8 minutes. Remove the prosciutto and remove all of the grease except for two table spoons worth. Lower the temperature of the pan to low heat and pour in the whisked eggs. Cook until they reach your desired consistency for scrambled eggs. 
To assemble fill Bellisari's Phyllo Shell with 1 tablespoon of scrambled egg and top with crispy prosciutto, 1 cube of mozzarella and a dab of Bellisari's Calabrian Pepper & Sweet Tomato Fennel Spread. Enjoy!
